Vera’s Bacalhau a Brasileira
(Brazilian Codfish Casserole)
2 lb codfish
3 med potatoes
2 med onions
2 green bell peppers
6 large garlic cloves
8 green olives
4 tomatoes
½ cup olive oil
4 hard boiled eggs
Black pepper/Salt
Soak the codfish for 12 hours
in a bowl, changing water once. If using frozen fish, no need to
soak.
With finger separate in 2 to
3 inch pieces.
Pre-heat oven to 350’
F.
Slice thinly the potatoes,
onions, green peppers, tomatoes and garlic.
Cut eggs in round slices and
set aside.
Baste generously bottom of a
large casserole dish with olive oil cover bottom with potatoes and
layer the remainder of ingredients sparsely in this
order:
Codfish, onions, garlic,
green peppers, olives, tomatoes & black pepper. Start over with
potatoes and finish with onions and garlic.
Pour the remainder olive oil
over.
Bake for 40 minutes and
garnish with eggs.
Serve hot with white rice and
green tossed salad.
