Luis’s Beer Battered Baja Fish Tacos & Uncle Willy's Flan

4-6 Servings

 

Mahimahi (whitefish) 8-10 ozs. Cut into strips

Canola Oil 2-3 cups

Corn Tortilla’s

Red/Green cabbage shredded 1 cup

1 Lime sliced into wedges

Shredded Cheese ½ cup

 

Beer Batter

Corona Beer 1 bottle

Flour 1 cup

Bisquick Pancake batter 1cup

Yellow Mustard 3 Tbsp

Salt/Pepper to taste

Using a big spoon, mix all ingredients in a bowl

 

White Sauce

Plain Yogurt 1cup

Mayonnaise ½ cups

Milk ½ cup

Old Bay Seasoning 1 Tbsp

Salt/Pepper to taste

Using a whisk, mix all ingredients in a bowl

 

Red Roasted Arbol Chili Sauce

Arbol Chili’s 4-5

Tomato Sauce 1 can

Salt to taste

Place ingredients in a blender and blend until chili’s are all broken up and well mixed, set aside

In a deep pan, heat oil. Dip fish strips into batter and fry in oil. Drain on plate w/paper towels

Heat a few tortillas in a pan or microwave for about 20-30 seconds

In each tortilla, place small amount of cheese, add fish, add cabbage, top with red chili and white sauce. Finish with a squeeze of lime. Enjoy!!!

Uncle Willy’s Flan 

 

 

Caramel

1 cup sugar

½ cup water

 

Stir until sugar is dissolved, cover with lid and cook on medium heat for 5 minutes. Remove cover and continue cooking process until sugar is an amber color. Do not stir sugar during the caramelizing process as it will not thicken properly. (approx. 10-15 min. be careful sugar does not burn)

When sugar is amber color pour into flan dish and swirl around sugar until bottom and sides are coated. Let cool to harden.

 

Custard

While sugar is caramelizing, heat to lukewarm:

1 can evaporated milk

1 can condensed sweeten milk

1 can of water from condensed milk

 

Whisk 6 whole eggs

1tbs. vanilla or orange flavored liqueur

 

Slowly pour warm milk mixture into beaten eggs and whisk thoroughly.

Strain through a mesh strainer into caramel coated baking dish.

 

Sit dish in a water bath (water in a cake pan as deep as ½ to 1 inch).

Bake flan in water bath for approximately 1 hour to 1hour and 10 min. until there is just a slight jiggle in the middle.

Remove from water bath and cool to room temperature.

Serve warm or cold.
