Bella’s Salmon Topped with
Nuts
Salmon 1 5oz
filet
Assorted Nuts Chopped 2
Tbsp
Mango chopped 2
Tbsp
Roasted Bell Pepper chopped 2
Tbsp
Salt/Pepper to
taste
Top Salmon with nuts, mango and
bell peppers
Place in oven proof container and
cover
Roast at 500 degrees for 5-6
minutes or until internal temp reaches 145
degrees
Bella's Salmon
Saute
Salmon 1 5oz
filet
White wine 2-3
Tbsp
Garlic minced 1
clove
Olive Oil 1-2
Tbsp
Butter ½
Tbsp
In a hot pan sauté garlic in olive
oil
Add salmon, sauté 1 minute
Add white wine, sauté 2-4
minutes
Finish with butter
Uncle Willy's Baked
Alaska
Slice and cut pound or sponge cake
according to desired shape for your baked
Alaska.
(Using a biscuit or cookie cutter)
Top with a scoop of your favorite ice
cream (slightly thawed)
Mold ice cream to your liking on top of
cake piece and wrap with plastic wrap.
Freeze for 30 – 60 minutes
Prepare meringue:
6 egg whites
½ tsp cream of tartar
8 Tbs. sugar
1 tsp. vanilla
Yields 1 ½ cups
Begin by whipping egg whites in blender
for a few minutes.
Add cream of tartar to sugar and SLOWLY
add to egg whites; add vanilla….
Whip until stiff but not dry.
Pipe meringue (from a pastry bag with
star tip) over the top of frozen ice cream/cake.
Broil in oven for a few minutes until
golden brown or use a baker’s torch and torch meringue until
browned.
