
1 lb. Penne Pasta
cooked al dente
1 Bunch Arugula
separated from stems and roughly torn
3-4 Roma Tomatoes
chopped
4-5 Garlic cloves
minced
3-4 Tbsp Extra
Virgin Olive Oil
Parmesan
Cheese
Salt to
taste
Cook Penne Pasta
following instructions until Al Dente
In a large bowl,
combine garlic, tomatoes, and Arugula leaves with the olive
oil
When pasta is done,
add to the bowl
Toss it all
together and top with parmesan cheese
Note, pasta will
absorb the olive oil so you may want to add more if you
desire
Salt to taste if
needed

Nut Biscotti
Butter ¾
cup
Granulated Sugar 2
cups
Eggs 3
medium
Flour 3
cups
Baking Soda ½
Tbsp
Baking Powder ½
Tbsp
Macadamia nuts
chopped 1/3 cup
Vanilla 1
tsp
In a mixing bowl
cream sugar and butter, add eggs, vanilla and mix on low speed till
well mixed
Add flour, baking
powder, baking soda and macadamia nuts
Mix on low speed
for one minute, then medium speed to finish mixing
Dust work surface
with flour
Roll and form dough
into two, two inch logs about 12 inches long
Place logs unto
greased baking pan. Bake both logs at 350 degrees for 20-25
minutes
Remove from oven
let cool to touch
Slice logs at ½
apart across logs
Return to
pan, turn each piece on its side and bake at 325 degrees for 20-25
minutes or until golden brown
