
Rajanee’s Pad Thai
Noodles
12 Raw Prawns cleaned and
shelled
8 oz Rice Stick
Noodles
1 Tbsp Chopped
Garlic
2 Eggs
1 Bundle Green Onions cut into 2 in
length
3 Cups Bean
Sprouts
½ Cup Small Fried
Tofu
½ Cup Ground
Peanuts
1 Tsp Roasted Chili
Flakes
5 Tbsp Sugar
2 Tbsp Fish
Sauce
¼ Tsp Salt
4 Tbsp Vinegar
½ Tsp Paprika
1 Tsp Lime Juice
1 Cup Cilantro
Cooking oil(3-4 tbs)
Lemon Wedges
Soak Rice Noodles in water in a large
bowl for 3 hours.
Heat wok and add cooking oil and garlic.
Gently stir in 1 egg per serving required. This
recipe was for two people.
Add shrimp and keep stirring(this is a
stir-fry, after all!)
Add drained rice noodles, vinegar, 2 tsp
sugar and a little more cooking oil. Are you
stirring?
Add Fish sauce and a dash of
salt.
Add the paprika for
coloring.
Add the dry roasted chili to heat
desired.
Lastly, stir in the fried tofu...garnish with
green onions.
Plate. Eat. Smile.

Uncle Willy’s Banana-Lychee Spring Rolls
8 Lumpia
wrappers, large
2 sliced
bananas
1 can
drained Lychee
½ block
cream cheese (4 oz)
1/3 cup
powdered sugar
1 tsp
flour
Blend
softened cream cheese with powdered sugar and flour until
smooth.
Unfold 1
lumpia wrapper.
Add 1
tbs cream cheese mixture to wrapper, spread down the
middle.
Add 3
Lychee and 3 slices banana. Roll like a burrito, side first, then
the ends.
Fry in a
cup hot veggie oil, about 30 seconds each side until golden brown
and inside ingredients are warm.
Serve
hot with vanilla ice-cream.
