ALEXIA’S GREEN BANANA SALAD WITH COD FISH
(From St. Lucia Island)
2 lbs green bananas (not
plantains)
˝ lb. dried Cod fish
˝ cup mayonnaise
1 cup chopped celery
1 cup frozen peas and carrots
1 tsp. mustard
1 tsp. vinegar
salt/pepper to taste
Peel and boil green bananas until
tender. (20 – 30 minutes, prick with fork like testing for
potatoes)
Clean and boil Cod fish until it is no
longer salty. (Approximately 20 – 30 minutes). Cut fish into small
pieces and remove all bones. Set aside.
Drain water from bananas and chop into
small pieces.
Heat peas/carrots in microwave
approximately 1-2 minutes until lukewarm and drain
liquid.
Mix Cod fish, banana, chopped celery,
peas and carrots together in large bowl.
In a small bowl mix mayonnaise,
mustard, vinegar, salt and pepper.
Combine all ingredients until
thoroughly mixed. Refrigerate until ready to serve.8 servings
