Gulay sa Gata, Chef Dana's
Version: A
masterful adaptation of this traditional Filipino
dish! Serves
4-6
8 pieces Chicken- boneless skinless
thighs
2 cups Pumpkin –diced Kubocha or any
other Squash
2 cups Eggplant- diced
2 cups Ong Choy- stems cut 2 in. long,
leaves rough chopped
4 cups Coconut Milk
1 cup Onion- diced
3 Garlic cloves- minced
1 tb Ginger- minced
½ tb Sambal- optional
2 tb Oil
Salt/Pepper to taste
Saute onions,garlic and ginger in oil.
Add chicken and
brown..Add coconut milk,
cook 5 mins. Add pumpkin,
eggplant, cook 10-15 minutes. Add ong choy, cook 5 mins.
Simmer until chicken is
done. Serve hot
Variations: You can add your favorite
curry paste or powder for a different flavor!

Eydie's Family Spaghetti Sauce
W/Meatballs and Sausage
Sauce: 1 lb#
Spaghetti Noodles 1 - 28oz. can Whole Tomatoes 2 12oz. cans
Tomato Paste ½ cup Onions,
diced
6 Garlic cloves,
chopped 6-8 Basil leaves ½ tb Sugar 2 tb Olive Oil ½ tb
Baking Soda Salt/Pepper to taste Meatballs: 2 ½ #
Ground Beef 2 Eggs 2 cups Bread Crumbs 6 Cloves Garlic,
minced ½ cup Parsley, chopped 2 tb Water 6 Sweet or
Spicy Italian Sausages
Strain
tomatoes and juice to remove seeds. Break
tomatoes up by hand (Italian style)
Sauté olive
oil and onions for 2 mins. Add garlic
and continue sautéing until onions are
translucent.
Add Tomatoes,
cook 2-3 mins. Add Tomato
paste. Add 4-6 cups
of Water, adjust liquid to desired
thickness
Add
Salt/Pepper. Add Sugar,
Baking Soda. Tear Basil
and add. Bring to a
boil and simmer
In a frying pan add 1 tb Olive Oil. Brown sausages
and add to sauce
Meatballs: In a bowl, mix all ingredients
together
Make meatballs slightly larger
than a golf ball.In a frying pan, add 2 tb oil. Brown
meatballs and add to sauce
Cook for 2 hours. Serves
